A tasty salmon recipe & an easy BBQ recipe - Classic Australian food. You can replace salmon with thick white fish fillets. Get recipe & shop ingredients online: http://www2.woolworthsonline.com.au/Shop/Recipe/3196 Thinly slice fennel and zucchini, drizzle with oil. Cook on barbecue for 1-2 minutes. Score salmon skin, press thyme into cuts. Drizzle with oil, season. Cook salmon skin-side down on barbecue flat plate for 2 minutes each side or until cooked to your liking. Serve salmon with fennel and zucchini. Prep mins: 10 Cook mins: 10 Serves 2 Ingredients: 1 fennel bulb, trimmed and thinly sliced 2 large zucchinis, peeled into long ribbons 2 tbsp Select Spanish Classic olive oil, plus extra to serve 2 x 200g fresh Australian Tasmanian Atlantic salmon fillets, skin on and boned 8 sprigs fresh thyme 1 fresh hot baby chilli, deseeded and sliced 1/2 lemon, zest and juice Dill sprigs, optional Lemon cheeks, to serve Method: 1. Heat barbecue grill and flat plate. Drizzle fennel and zucchini with 1 tablespoon of oil. Cook fennel on the grill for 1-2 minutes on each side, or until soft and golden. Add zucchini ribbons to the grill. Cook for 1 minute. Transfer fennel and zucchini to a bowl. Add chilli, lemon juice and zest and dill if using. Season. Toss to combine. 2. Score the salmon skin. Rub the salmon with a tablespoon of oil. Season. Press thyme sprigs into the score cuts in salmon skin. Cook salmon skin-side down on the flat plate, for 2 minutes, turn. Cook for a further 1-2 minutes or until cooked to your liking. Transfer to a plate. 3. Plate salmon with fennel and zucchini, serve with lemon cheeks and drizzle with olive oil. Tip 1: You can use thick white fish fillets instead salmon. Tip 2: You can replace the fresh hot baby chilli with Select dried chilli flakes.
