Instructions

  1. 1Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
  2. 2In a large pot, heat ghee or oil over medium heat. Add cumin seeds, bay leaf, cardamom pods, cloves, and cinnamon stick. Sauté for a minute until fragrant.
  3. 3Add the sliced onions and sauté until they turn golden brown.
  4. 4Stir in the ginger-garlic paste and sauté for another minute until the raw smell disappears.
  5. 5Add the mixed vegetables and sauté for 2-3 minutes until they are slightly tender.
  6. 6Add the drained rice to the pot and gently mix to combine with the spices and vegetables.
  7. 7Pour in the water, add salt, turmeric powder, and garam masala. Stir gently to combine.
  8. 8Bring the mixture to a boil, then reduce the heat to low. Cover the pot with a lid and let it simmer for 15-20 minutes until the rice is cooked and water is absorbed.
