Flat rice noodles in egg gravy, also known as "Watt Tan Hor," is a popular Malaysian and Singaporean dish. It's a stir-fried noodle dish that typically consists of wide rice noodles (hor fun) with a variety of ingredients like seafood and chicken along with vegetables like choy sum mainly. The dish is known for its flavorful gravy, which is often a mixture of eggs, cornstarch and savory sauce. Wat Tan Hor is a delicious and comforting dish enjoyed by many in Southeast Asia. Ingredients: 200g Flat rice noodles (hor fun) 1 pieces fish cake, sliced 1-2 eggs, beaten 3 cloves garlic, minced 1/2 tbsp ginger, chopped 100g choy sum or other leafy greens 500 ml Chicken / vegetable broth or water Oil for cooking Ingredients for marinated: 1.) 100g sliced chicken or tofu 1 tsp soy sauce 1/4 tsp white pepper pinch of salt 1/2 tbsp cornstarch 2.) 4-6 shrimps, shelled & deveined, 1 tsp soy sauce 1/4 tsp white pepper Pinch of salt Soy sauce mixture for stir fry: 1 tbsp soy sauce 1/4 tsp dark soy sauce Seasoning for gravy: 1 tbsp sugar 1/2 tsp salt, adjust to your taste 1/2 tsp white pepper 1 tsp sesame oil For the slurry: 2 tbsp Cornstarch 1/4 cup water for the slurry Instructions: 1.) Prepare the noodles, (i use homemade noodles) 2.) Heat oil in a wok. Coat the oil all over the wok, then pour out the oil back again. keep aside for later use. 3.) Add in the flat rice noodles, then add in the soy sauce mixture. Stir fry till the noodles are costed well with the sauce and slightly charred. Remove and set aside. 4.) In a same wok, heat 1-2 tbsp oil. Sauté the garlic and ginger till fragrant. Then add in the marinated chicken and fish cake. 5.) Cook for 1-2 minutes, then add in the marinated shrimps, cook another 1 minutes, then add in the chicken broth or water. 6.) Season with the sugar, white pepper and salt. Simmer for 1-2 minutes over low heat, then add in the vegetables and slurry. 7.) once it’s boiled, add in the beaten egg. Turn off the heat and slightly mix the gravy, so the egg is spread evenly in the gravy. 8.) If you prefer a thicker sauce, you can mix some cornstarch with water and add it to the wok. Stir until the sauce thickens. 9.) Taste and adjust the seasoning if needed. 10.) Serve the Wat Tan Hor hot, garnished with some chopped scallions if desired.
