Bedai is neither a puri, nor a kachori, it is special in the sense that it is stuffed like a kachori but cooked at high heat like a puri. The stuffing for bedai includes soaked urad dal, besan, whole wheat flour and spices. The dough for bedai too includes kasuri methi, salt, shortening. The famous kali sabji served with the bedais an aloo sabji that does not have any tomatoes! If you ever visit agra, you will see people thronging the bedai sabji stalls in the morning. Recipe: Bedai Sabji Preparation time: 20 to 25 minutes Cooking time: 20 to 25 minutes. Serves: 5 to 6 Ingredients: For the dough: 1 cup whole wheat flour 1 cup semolina (suji/rawa) 1 tbsp kasuri methi 1 tsp salt 2 tbsp ghee For the filling: One Cup soak urad dal ½ cup besan ½ cup whole wheat flour Salt to taste 1 tbsp red chili powder 2 tbsp amchur powder 2 tbsp coriander seeds, crushed 2 tbsp chopped coriander leaves 2 tbsp garam masala ½ tsp baking soda For the sabji: 6-7 boiled potatoes 3 tbsp oil ½ tsp hing 1 tsp cumin seeds Salt to taste 1 tbsp red chili powder 2 tbsp amchur powder 2 tbsp coriander seeds, crushed 2 tbsp chopped coriander leaves 2 tbsp coriander powder 1 tbsp garam masala ½ tsp turmeric powder 1 tbsp kasuri methi Method: For the bedai: Add the suji, salt, kasuri methi, ghee to the flour and mix well. Add a little water at a time to knead to a stiff dough. Mix together all the ingredients for the stuffing. Break small balls of the dough. Stuff with a tbsp of the filling and seal. Flatten and roll out to a puri. Fry in medium hot oil till golden and crisp. For the sabji: Mix together all the spices in a bowl. Heat oil in a pan. add the hing and cumin seeds and allow to splutter. Add whole spices and mix. Add the powdered spices, kasuri methi, mix and add 1 cup water. Allow the spices to cook well. Add crushed boiled potatoes, 1 litre water and bring to a boil. Simmer till the gravy thickens and reduces to almost half. Add chopped coriander leaves.
