Use up every part of your Thanksgiving turkey leftovers, take the carcass and turn it into ramen. This one is a fall themed spicy miso version adding extra umami to a turkey broth. Homemade noodle recipe https://www.youtube.com/watch?v=o-ZKY7lvalY ajitsuke eggs recipe https://www.youtube.com/watch?v=tk-GPfj-go8 Makes about 3-4 servings Turkey Ramen Ingredients 1 turkey carcass 1 green onion 1 onion 1 head garlic 2 inch knob ginger Spicy miso tare Ingredients 1/2 onion 4 cloves garlic 1 inch knob ginger 2 tbsp red miso 2 tbsp white miso 1.5 tbsp gochujang 1 tbsp sugar 1 tbsp mirin 1 tbsp Korean chili pepper flakes 2 tbsp oil (to fry) Toppings 1 ramen egg ½ (one-half) sheet of nori, cut into squares 1 green onion, chopped 1 wood ear mushrooms 1 slice of kabocha, pan fried 2 to 3 slices of turkey meat Directions Turkey Broth: 1. Add turkey bones and vegetables to pot and cover with ~3 quarts of water 2. Pressure cook on high for 90 mins Spicy Miso Tare: 1.Place onion, garlic, and ginger (our aromatics mixture) into a food processor. Pulse until finely chopped. 2. Add the red miso, white miso, Gochujang, aromatics, sugar, mirin, and Korean chili pepper flakes to a bowl. Mix together until combined. Toppings: 1. For the wood ear mushrooms - Boil about a cup of water and soak the mushrooms in the hot water for about 20 minutes. After 20 minutes, trim off the hard ends and discard. Then slice the mushrooms thinly and set aside for topping at end. 2. For the kabocha - add about ½ tbsp of oil to a pan over medium high heat. Fry on both sides for about 2 to 3 minutes, making sure to press down on the kabocha for full contact with the pan. Set aside once fully browned. Turkey Ramen Assembly: 1. Fry 2 tbsp of the spicy miso tare in 2 tbsp oil over medium heat. I suggest using a wok or pan with tall edges as it can splatter. It will start to stick to the pan 2. Strain in about 2 cups of the turkey broth over the fried miso tare. Depending on how salty the original turkey broth is, you may need to add more salt. So give it a taste and adjust to your liking! 3. Fill bowl about halfway with seasoned broth 4. Add the cooked noodles and fold the noodles over as shown in the video (to create the perfect foundation for our toppings) 5.
