Ingredients: 2 Pillsbury Deep Dish Pie Crusts (or 1 pack with 2 crusts) 1 large (29 oz) can of peaches in heavy syrup 1 stick (1/2 cup) sweet cream butter 1 cup brown sugar 1 cup white cane sugar 2 tsp vanilla extract 1 tsp Mexican vanilla extract 2-4 dashes of ground nutmeg 2-4 dashes of allspice 2-4 dashes of ground cinnamon (or substitute with pumpkin spice) Serving Suggestion: Serve warm with a scoop of Vanilla or Butter Pecan Ice Cream for an extra indulgent treat! Instructions: Preheat Oven: Preheat your oven to 400°F (204°C). Prepare the Peach Mixture: In a large pot over medium to medium-high heat, combine the peaches with syrup, butter pieces, brown sugar, white sugar, vanilla extract, Mexican vanilla extract, nutmeg, allspice, and cinnamon (or pumpkin spice if preferred). Stir occasionally until the butter and sugars melt and the mixture begins to bubble, about 5-7 minutes. Remove from heat and let the mixture cool for 5 to 15 minutes. Assemble the Cobbler: Take one pie crust. Once the peach mixture has cooled slightly, pour it into the crust, spreading it evenly. Place the second pie crust on top of the filling.
