Let the chickpeas soak overnight (or atleast for 5 to 6 hours). After 6 hours, wash the chickpeas twice with fresh water, drain all the water and spread them on a cloth to dry under the fan for an hour or so. Once the chickpeas have dried well, heat oil in a pan and add the dried chickpeas to the oil and fry the chickpeas with lid ON for about 10 to 12 minutes. Do not cover the pan completely with the lid, leave some gap. The chickpeas will pop and the hot oil will fly everywhere in the room if you don’t cover with a lid. Be careful while frying the chickpeas, stay away and take a long ladle to stir occasionally. Once fried, take them out from oil carefully into a mixing bowl. Add the peanuts to the same oil and fry for a few minutes. Take out the peanuts and add them to the same mixing bowl. Add the cashews to fry in the same oil. Cashews take very less time to fry, so be careful. Take out the cashews and add it to the mixing bowl. Add the garlic cloves to the hot oil. Fry for a minute or so, add them to the mixing bowl. Then finally, add the curry leaves to the hot oil, fry for about 30 seconds and then switch off the flame, add them to the mixing bowl. Now in the mixing bowl, add the red chilli powder, salt and chat masala powder and mix all the ingredients really well. Let it come down to room temperature. You can store this mixture for 15 to 20 days in an airtight container at room temperature and enjoy this crunchy protein snack at any time.
