Marry Me Sausage Orzo Soup 19 oz. Italian sausage, casings removed if necessary 1 tablespoon olive oil 1 onion, chopped 4-5 garlic cloves, minced 1/2 teaspoon red pepper flakes, optional 1 teaspoon dried oregano 1 teaspoon dried basil 1 teaspoon garlic powder Salt and pepper, to taste 14 1/2 ounce can diced tomatoes 2 tablespoons tomato paste 1/2 cup sun-dried tomatoes, chopped 6 cups chicken broth 1 cup orzo 3 cups baby spinach 1/2 cup heavy cream 1/2 cup Parmesan cheese, grated Fresh basil, chopped Heat a large pot over medium heat. Add the sausage and cook until browned and broken apart. Drain some of the fat. Only add oil if there isn’t enough fat in the bottom of the pan. Stir in onion and cook until softened. Add garlic, red pepper flakes (if using), oregano, basil, garlic powder, salt and pepper. Cook 1 minute until fragrant. Stir in diced, tomato paste, and sun dried tomatoes. Mix well to combine. Pour in the broth and bring to a boil. Add the orzo and reduce heat slightly. Simmer 8-10 minutes, stirring occasionally, until pasta is tender. Another option is to cook the orzo separately and add when serving the soup. Stir in the spinach and cook until wilted, about 2 minutes. Reduce heat to low. Stir in the heavy cream and Parmesan cheese until melted and smooth. Taste and adjust seasoning if needed. Garnish with fresh basil or Parmesan cheese or both.
