Ingredients: 2 person | 4 person ½ | 1 Package Chicken - roughly chop ½ | 1 Onion - cut into large chunks ½ | 1 Bell Pepper - cut into slices ½ | 1 Zucchini - cut into large chunks ½ | 1 Broccoli - cut into florets ½ | 1 TBS McCormick Spice 1 | 2 Cups Rice 1 Package Chicken Stock Concentrate 1 | 2 Cloves Garlic - mince Olive Oil ¼ | ½ Cup Soy Sauce 1 | 2 TBS Brown Sugar ½ | 1 TBS Cornstarch ½ | 1 TBS Sriracha (more or less to taste) Directions: Cook rice per package instructions In a bowl, mix together the soy sauce, chicken stock, brown sugar, cornstarch, sriracha, and McCormick Spice. Set aside. Salt & Pepper chicken and cook it however you want to (air fryer, BBQ, stove top, it’s up to you!) Once done roughly cut to bite sized pieces and set aside In a large skillet add a drizzle of olive oil over medium-high heat. Add the onions & peppers and stir, cooking for 2 to 3 minutes. Add the garlic and cook for 30 seconds to 1 minute more, stirring continuously. Add the zucchini and broccoli and cook a couple more minutes. While the veggies are still firm, pour in the sauce Add chicken, cover and cook until the veggies are soft and the sauce thickens. If it needs to be a little saucier, pour in 1/4 to 1/2 cup water and splash in a little more soy sauce Serve over rice and enjoy!
