Buy your favourite Cookd Recipes in a box! 👉 https://shop.cookdtv.com Potato Bonda Recipe: Oil - 1 tbsp Mustard Seeds - ¼ tsp Cumin - ¼ tsp Ginger (finely chopped) - 1 ½ tsp Green Chilli (finely chopped) - 1 tbsp Curry Leaves (finely chopped) - 1 tbsp Cashew (broken) - 2 tbsp Asafoetida - A Pinch Turmeric Powder - ½ tsp Lemon Juice - 1 tbsp Salt - ½ tsp Boiled Potato - 3 nos (400 grams) Coriander Leaves (finely chopped) - 2 tbsp For the Batter: Besan Flour - 1 Cup Rice Flour - ¼ Cup Turmeric Powder - ¼ tsp Red Chilli Powder - 1 tsp Salt - ½ tsp Asafoetida - A Pinch Baking Soda - A Pinch Water - ½ Cup + more, if required Oil - For Deep-Frying Instructions: Potato Mixture 1. Heat oil in a pan and crackle mustard seeds and cumin. Add ginger, green chilli, curry leaves, cashew, asafoetida, and turmeric powder. 2. Saute for a minute to remove the raw taste of the ginger, then add lemon juice and salt. 3. Add the boiled potato, mash and combine to mix evenly. 4. Add coriander leaves, mix and turn off the heat. 5. Once it cools, make small roundels of the potato mixture (around 2 inches in diameter). For the Batter 1. Combine together besan, rice flour, turmeric powder, red chilli powder, salt, asafoetida and baking powder. Mix and then add water gradually until it forms a thick batter. Frying 1. Heat oil in a kadai. Once the oil is hot, dip the potato roundels in the batter then add it to the hot oil. 2. Fry on medium-high heat until it turns crips and golden, around 4 minutes. 3. Remove from the oil and drain on kitchen tissue. Serve with coconut chutney, or any other chutney of your choice. It can also be served on its own.
