Mascarpone Cheese Easy Swiss Meringue Buttercream Ingredients 1 c pasteurized egg whites 32 oz (8 c or a 2-pound bag) powdered sugar 3/4 tsp kosher salt 1 1/2 c unsalted butter 16 oz Mascarpone Cheese 3 T vanilla extract Directions 1. Whisk egg whites and salt until they're foamy all the way through. 2. Add in powdered sugar a little at a time. Add in vanilla. 3. Add in butter, 2 tablespoons at a time and the same with mascarpone cheese. 4. Use the paddle attachment for 15-20 minutes to get air out if you want a smooth edge.
