Leg of Lamb with Coconut Milk and Roasted Vegetables 4-7 lb leg of lamb Serves: 4-8 people Prep: 15 mins Cook: 45 mins Total: 1 hr Additional equipment 1 large roasting pan 1 digital thermometer 1 roasting rack or use balls of foil between the leg of lamb and the roasting pan Ingredients ¼ cup extra virgin olive oil + 3 tablespoons (reserved for later) 1 ½ tablespoons Basil (Chopped) 1 ½ tablespoons Mint (Chopped) 1 ½ tablespoons Paprika 1 ½ teaspoons ground cinnamon 1 tablespoon salt 20 cloves 3 Bay leaves 2 slices of fresh ginger 1 onion (large dice) 10-12 cloves of garlic (smashed) 3 zucchinis (chopped) 3 Acorn squash (chopped) 2 cups of coconut milk 1. Take the lamb leg and rub with ¼ extra virgin olive oil and let it sit for 5 minutes. 2. Take a fork and gently rake the meat all around (This will ensure that the meat will fall off the bone) 3. Pierce 20 cloves all around the lamb leg 4. Pour 2 cups of coconut milk over the lamb and season both sides with 1 tablespoon of salt. Wrap the lamb and roasting rack with foil and cook for 1 hr at 325 F˚ (Baste after 1 hr) 5. After 1 hr, take the cloves off and let it fall to the bottom of the roasting pan. 6. Take a sharp knife and cut off the fat all around the leg and let it fall into the pan. 7. Rub the leg of lamb with the dry spices, chopped mint, chopped basil and 3 tablespoons of extra virgin olive oil. 8. Add the smashed garlic, chopped acorn squash, sliced onion, cut zucchini, sliced ginger, orange peels, lime peels, bay leaves along with ½ tsp of paprika, ½ teaspoon of salt and mix. 9. Cook at 425 F˚ for another hour or until the lamb reads 160 F˚. (Baste after 30 mins) 10. Allow the meat to rest 15 minutes before slicing and reduce the sauce for 10 mins until it thickens up.
