Add... 1 egg Beat well until mixture becomes pale yellow in color. In medium size mixing bowl add... 2 1/3 cups all-purpose flour 4 teaspoons baking powder 1/2 teaspoon salt Blend well with whisk. set aside. In a small mixing bowl add... 1 cup buttermilk 1 teaspoon vanilla Combine well. Set aside. Add 1/3 flour mixture, alternately with 1/3 of buttermilk, to creamed butter until all the flour and buttermilk is mixed well into butter mixture. Fold in... 1 1/2 cup fresh or frozen BLUEBERRIES Fill 12 greased or paper-lined muffin cups until two-thirds full. STREUSEL TOPPING In medium mixing bowl add... 1/2 cup sugar 1/3 cup all-purpose flour 1/2 teaspoon ground cinnamon 1/4 cup cold butter Cut butter into first three ingredients. Sprinkle about one tablespoon of streusel on top each muffin. Bake in a 375 degree preheated oven for 25-30 minutes. Use a tooth to make sure muffins are completely baked before removing from over.
