Ingredients: 1) 1 cup whole green lentils 2) 1 cup basmati rice 3) 4 tbsp olive oil - divided 4) 1 1/2 tsp. Salt 5) 1 small onion chopped 6) 1 small onion sliced into wedges 7) 4 cups water, divided Directions: 1. Over high heat, place 2 cups of water and 1 cup green lentils in a pot and bring to a boil. 2. Cover and lower heat, let simmer for 15 minutes. 3. Drain lentils, discarding all the liquid, and set aside. 4. Heat 3 tbsp. of olive oil over medium high heat and add chopped onions. 5. Sautée onions until translucent, about 5 minutes. 6. Add rice and toast for 2 minutes. 7. Add drained lentils, salt, and 2 cups of water to pot. 8. Bring to a boil, lower heat and cover. 9. Cook for 20-25 minutes or until rice is is fully cooked and all liquid is absorbed. For garnishing: 10. In a shallow pan, heat 1 tbsp. olive oil over low heat. 11. Add sliced onion and cook for 6-8 minutes on low heat until the completely cook down and soften. 12. Turn heat to medium-high and continue sautéing onions for about 2 minutes until they develop a crispy exterior, remove onions from heat and oil and set aside. 12. Pour the leftover oil in the pan over cooked rice and lentils and mix. 13. Add caramelized onions for garnish. Enjoy!
