(As an Amazon Affilliate, I may earn a small commission off any purchase) https://linktr.ee/wideworldofwendi RECIPE: One-Pan Creamy Chicken & Rice Skillet Ingredients1 lb boneless, skinless chicken thighs or breasts (cut into chunks) 1 tbsp olive oil 1 small onon, diced 2 cloves garlic, minced 1 cup long-grain white rice (uncooked) 2 cups chicken broth ½ cup milk or half-and-half 1 tsp salt ½ tsp black pepper 1 tsp paprika ½ tsp dried thyme or Italian seasoning 1 cup frozen peas or mixed vegetables Optional: grated Parmesan for serving Cooking Instructions Brown the chicken Heat olive oil in a large skillet over medium heat. Add chicken, season with salt, pepper, and paprika. Cook until lightly browned (about 4–5 minutes). Remove to a plate. Build the flavor In the same skillet, add onion and cook until soft (2–3 minutes). Stir in garlic and cook 30 seconds. Add rice & liquid Stir in uncooked rice, chicken broth, milk, and thyme. Bring to a gentle simmer. Return chicken & cover Nestle chicken back into the skillet. Cover, reduce heat to low, and cook for 18–20 minutes until rice is tender and chicken is cooked through.
