Instructions

  1. 1Soak rice noodles in warm water until pliable, about 30 minutes.
  2. 2Heat vegetable oil in a large skillet over medium-high heat until shimmering.
  3. 3Add minced garlic and sauté for 30 seconds until fragrant.
  4. 4Add cubed tofu and cook until golden brown, about 5-7 minutes.
  5. 5Push tofu to one side of the skillet and crack an egg into the other side.
  6. 6Scramble the egg until fully cooked, then mix with tofu.
  7. 7Add soaked rice noodles and stir to combine with tofu and egg.
  8. 8Pour in fish sauce, soy sauce, and sugar; stir-fry for 3-4 minutes until noodles are heated through.
  9. 9Add bean sprouts and chopped green onions; toss to combine.
  10. 10Sprinkle chili powder to taste and mix well.
  11. 11Remove from heat and garnish with crushed peanuts and fresh cilantro.
  12. 12Serve with lime wedges on the side.
