How to Cook Basic Lentils - Episode 67 Ingredients Lentils - French (Puy) or Italian (Umbrian) preferred. Chicken Stock - 4 cups (1 box) Yellow onion - 1 medium Cloves - 2 Bay leaf - 1 Kosher Salt and Pepper to taste Thyme - 1/2 t - dry - OPTIONAL Combine all ingredients. Bring to boil, immediately lower to a simmer. Simmer for 15 minutes, check for doneness, check every 5 minutes if not done. Remove from heat when lentils are cooked through, but still have a little firm bite in the center. Let cool and adjust salt and pepper to taste. Remove and discard onion, cloves, and bay leaf. Serve alone as side, or add to salads.
