Serves: 2 Prep Time: 5 mins Cook Time: 15 mins Ingredients: 200g Napolina Penne Pasta 1 tbsp Napolina Olive Oil 135g smoked pancetta, diced 1 tbsp Napolina Chilli & Sundried Tomato Olive Oil 3 garlic cloves, finely chopped 1 small onion, finely chopped 1 can Napolina chopped tomatoes 2 tbsp Napolina tomato puree 30g pecorino, grated, plus more for serving Basil leaves, for serving Salt and pepper to taste Method: 1. In a large frying pan, add the Napolina Olive Oil, garlic and onion and sweat over a medium heat for a few minutes until soft and fragrant then add in the pancetta and cook for 4 minutes until cooked through. 2. Next add in the Napolina chopped tomatoes followed by the Napolina tomato paste, pecorino and salt and pepper to your liking then mix together well and reduce to a simmering heat for 10 minutes. 3. Cook the Napolina Penne pasta according to the packet instructions then add the pasta to the arrabbiata sauce then drizzle over the Napolina Chilli and Sundried Tomato Olive Oil and toss gently then serve up into two bowls and finish with a little extra pecorino and a handful of fresh basil leaves and enjoy!
