Video Description

This is my new favorite way to prepare fish! It cooks in minutes and it falls apart! So good and the marinade is just a couple ingredients that you probably already have. Simply combine olive oil, soy sauce, salt, paprika, ginger, lemon zest and lemon juice. Coat your fish in this marinate and start your fire. We used mackerel, and it turned out amazing. I asked the fishmonger to butterfly my fish and to take out the spine. This got rid of most of the bone and I took out the larger ones at home. The flavor of the fish worked amazing with our simple marinade. Feel free to use your favorite type of fish and let us know how you like it. When you have your fire going, roll up your fish halves and skewer. Making sure to get the end so the fish doesn’t unravel, just as you see us doing in the video. Once the charcoal is very low, you are ready to place your skewers on the grill. Be sure to flip every 30 seconds, as the fish skin will burn quickly. We turned the skewers to the side to allow more cook time on the meat of the fish. Before the skin has a chance to burn, you want the fish to cook through. This shouldn’t take long at all. Depending on your flame and thickness of your fish it will take about 5-10 minutes. Give this unique recipe a go and let us know how much you love it!
