If you've been watching my show, you know I use piloncillo - Mexico's traditional unrefined cane sugar - in my kitchen a lot. In Nuevo León, I finally get to see how it goes from sugar cane to the rich, deeply caramelly, complex ingredient I find irresistible at the Garza family vineyard in Allende. They invite me to join in their annual tradition of making piloncillo, and the entire town comes to help out, too. Then, in the magic town of Bustamante, I meet the three sisters who run the beloved Panadería Casso de Luna to taste their rustic, delicious pan dulce pulled straight from their adobe oven.
