Sorullitos de Maiz can be prepared with or with out the cheese to very flavor. They are great with a breakfast coffee then keep a couple for a lunch snack, but let's be honest they wont last because other people will just grab your stash lol. http://www.averageguygourmet.com/sorullitos-de-maiz/ Total Time: 20 minutes Makes: 20 fritters 2 Cups of Water 1/2 tsp. Salt 1/4 Cup sugar 1-1/2 Cup Fine Cornmeal 4 oz. Gouda Cheese, Shredded 1. In medium sauce pan, bring water to a boil. Remove from heat and stir in salt, sugar, and cornmeal. Return to heat and cook fro 2 - 3 minutes, stirring constantly, until dough does not stick to the pot. 2. Remove from heat and stir in cheese. Let sit for 5 minutes, or until cool enough for you to handle them. Roll in to small cigar shapes. 3. In a large skillet heat 2 cups of oil to 375 degrees (or if using a deep fryer like me just set to 375), cook sorullitos 4-6 at a time, making sure not to crowd the pan until lightly golden brown.
