Ingredients

  • 2 cups almond flour
  • 1 cup coconut sugar
  • 1/2 cup unsweetened applesauce
  • 1/2 cup almond milk
  • 1/4 cup coconut oil, melted
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup dairy-free chocolate chips (optional)

Instructions

  1. 1Preheat your oven to 350°F (175°C).
  2. 2In a large mixing bowl, combine the almond flour, coconut sugar, baking soda, and salt.
  3. 3In another bowl, mix together the applesauce, almond milk, melted coconut oil, and vanilla extract until well combined.
  4. 4Pour the wet ingredients into the dry ingredients and stir until just combined. If using, fold in the dairy-free chocolate chips.
  5. 5Grease a 9-inch round cake pan with coconut oil or line it with parchment paper.
  6. 6Pour the batter into the prepared cake pan and smooth the top with a spatula.
  7. 7Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. 8Remove from the oven and let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  9. 9Once cooled, you can frost the cake with your favorite allergen-free vegan frosting or enjoy it plain.
