This Middle Eastern popular baked Kofta recipe has many versions. This recipe is my way of preparing baked Kofta bil Tahina with plant-based Kofta🤍 Baked Kofta Recipe 👇 Ingredients: Vegan Kofta Ingredients: 500 g vegan mince ½ cup white onion, diced ⅓ cup parsley, minced 2 garlic cloves minced 1½ tsp pink salt 1 tsp black pepper 1 tsp cinnamon 1 tsp cardamom 1 tsp Aleppo pepper 2 tbsp olive oil Vegetable Ingredients: 1 large potato, sliced 1 white onion, sliced 1 large tomato, sliced 1 large green pepper, sliced 3 tbsp olive oil 2 tsp pink salt 1 tsp pepper 2 tsp cinnamon 2 tsp cardamom 1 tsp Aleppo's pepper heaped spoon Tahini Sauce Ingredients: 1 cup tahini 1 cup soy yogurt 2 garlic cloves minced 1 lemon juiced 1 tbsp sumac powder 1 tsp pink salt 1 tsp black pepper Kofta & veggies reserved liquid Toasted pine nuts are optional for garnish Chopped parsley is optional for garnish Method: Preheat the oven to 200℃. Prepare a baking dish and brush some olive oil. Add all the sliced veggies (potatoes, tomatoes, onions, and pepper) in a big bowl. Add olive oil. Add all of the spices, salt, and pepper, and mix well to combine and coat the veggies well with the spice mix. Place the potatoes first in the baking dish. Bake in the oven for 15 minutes first. Then, add the other veggies to the potatoes and return them to the oven. Bake for another 15 minutes. While the veggies are baking, prep the kofta. Place the vegan mince in a bowl. Add the minced onion, parsley, and garlic. Add olive oil and all the spices, salt, and pepper. Mix with your hand to combine. Using your hand, form a portion of the kofta mix into a disc shape. Once the veggies are cooked, add the kofta to the veggies. Drizzle some olive oil on the kofta. Place the baking tray back into the oven. Bake for 10-15 minutes, or until the kofta is cooked. While the kofta is cooking, prepare the tahini sauce. Into a bowl, add the tahini sauce ingredients and mix well to combine. Take the kofta tray from the oven and add the liquid from the cooked kofta and veggies to the tahini sauce. Mix well and pour the tahini sauce on top of the kofta. Place the kofta back into the oven and bake for 5-7 minutes. Garnish the kofta with toasted nuts and chopped parsley. Serve with bread or vermicelli rice. Vermicelli Rice Recipe 👇 Ingredients: 1 cup white basmati rice ½ cup vermicelli ¼ cup olive oil, light olive oil 1 ½ cup water 1 tsp vegetable bouillon powder Optional ingredients: cinnamon powder toasted almonds chopped fresh parsley Method: Wash, drain, and soak the rice for 20-30 minutes. This step is crucial before cooking the rice, so it cooks much faster if pre-soaked, and the rice will be fluffy. To a measuring jug add 1½ cups of hot water and dissolve the bouillon powder. Set it aside for later. Put the pan on the stove on high heat. once heated, lower the heat to a medium-high and add the olive oil, then add the vermicelli and start stirring it on medium-high heat for 5 minutes until golden brown. Be careful not to overcook your vermicelli as it can quickly burn and turns black, so keep an eye on it while stirring. Drain the soaked rice, and add it to the pan with the vermicelli and stir to combine, mix for 1 minute before adding the water to the pan. Add salt and some of the cinnamon powder if using, and reserve the rest for garnishing at the end. Let the water boil for a minute on high heat. Lower the heat, put the lid on, and let it simmer for 15 minutes undisturbed. After 15 minutes, open the lid, fluff the rice with a fork, and turn the heat off. let the rice rest for 5 minutes with the lid close before you serve it. Serve the rice in individual bowls or on a big serving plate, garnish with the remaining cinnamon powder, toasted almonds, and chopped parsley.
