This recipe is my adaptation of a very well known, spicy and rich meat curry popular in Eastern India (Champaran Meat). In India, the meat is cooked in clay pots placed in a clay oven, and the flavor is unique. It is very difficult to reproduce the clay flavor in our own kitchens and so I used a cast iron pot placed in an oven. This recipe uses a lot of exotic spices that you probably are not familiar with and don't have in your kitchen. Fear not! These are easily available at any local Indian or South Asian grocery and cost a couple of dollars or less for a packet.
