Make Valentine’s Day extra special with this rich, creamy Marry Me Chicken Pasta - made with Napolina Rigatoni, sundried tomatoes, mascarpone and tender marinated chicken. A romantic Italian‑inspired dish ready in under 30 minutes. Perfetto for date night. Serves 2 Time: 10 mins Cook Time: 20 mins Ingredients: 200g Napolina Rigatoni 2 chicken breasts, sliced 2 tbsp Napolina Chilli & Sundried Tomato Olive Oil, plus extra for serving 75g sundried tomatoes, roughly chopped 1 tbsp Napolina Herbs & Garlic Flavour Booster 2 tsp oregano 1 medium onion, finely chopped 1 tsp smoked paprika 1 tsp onion powder 50ml chicken stock 2 tbsp mascarpone Handful of Parmigiano Reggiano, plus more for serving Handful of fresh basil leaves, plus more for serving Salt & black pepper, to taste Preparations: 1. Marinate the chicken: Combine the smoked paprika, onion powder, Napolina Chilli & Sundried Tomato Olive Oil, 1 teaspoon of oregano, and a pinch of salt and pepper. Mix well, then brush the marinade generously over the chicken breasts. 2. Next, heat a pan over medium–high heat and cook the chicken until fully cooked through. Remove the chicken from the pan, leaving behind all the rich, flavour-packed oils. 3. To make the sauce: deglaze the pan with a splash of prosecco, scraping the caramelised bits. Add the onion, remaining oregano and sundried tomatoes, cooking until softened. Stir in the chicken stock, mascarpone, Napolina Herbs and Garlic Flavour Booster, basil leaves, Parmigiano Reggiano, and a little salt and pepper. Mix until the sauce becomes glossy, rich, and creamy. 4. Toss the cooked Napolina Rigatoni into the sauce, folding gently so every piece is coated. 5. Slice the cooked chicken breasts, then serve the pasta into bowls, topping with the sliced chicken, fresh basil leaves, and an extra sprinkle of Parmigiano Reggiano. Enjoy! Love this recipe?
