This tasty and easy brown rice breakfast dosa is gluten-free, vegan, and loaded with vitamins, minerals, fiber, and plant-based protein. A healthy and nutritious way to start your day! Ingredients: Brown Rice/ matta rice - 1 cup Whole moong/green gram -1/4 cup Chickpea/ chana - 1/4 cup Shredded coconut - 1/4 cup Ginger - 1/2 inch Green chilli - 1 Jeera/cumin seeds - 1/2tsp Green chilli - 1 Coriander leaves - 2 tbsp Salt to taste Water - 1 to 1.5 cup or as required Ghee or oil for roasting Method: Wash brown rice, moong dal, and chana dal together. Soak them in enough water for 6-8 hours (or overnight). Drain the soaked ingredients and transfer to a blender. Add shredded coconut, ginger, green chili, cumin seeds, and salt. Grind into a smooth batter, adding 1 to 1.5 cups water as needed. The batter should be fine or slightly coarse. Transfer to a bowl. Add chopped coriander leaves. Heat a non-stick or cast-iron pan on medium flame. Pour a ladleful of batter and spread it in a circular motion (like a thin crepe). Drizzle ghee/oil around the edges for crispiness. Sprinkle chopped coriander leaves on top. Cook until the edges turn golden brown, then flip and cook briefly.
