Light olive oil 1-2 Tbsp minced garlic 1 tsp dried rosemary or fresh salt and pepper 1/2 cup diced onion 2/3 cup parmesan Optional: pine nuts, slivered almonds, seeds Cook turkey with minced garlic and rosemary in skillet, drain any grease. Cook sweet potatoes if needed and dice. Slice and dice onion and zucchini. Toss veggies in large baking dish (this recipes makes a lot), add in ground turkey, salt, pepper and light olive oil drizzle, toss again. Add another layer of oil to the top and add parmesan. Bake 350 for about 30 minutes. This recipes makes lots of leftovers for lunches! I also really like it for breakfast (add a cup of this dish to a skillet, scramble and egg or two and add it in). You could also add some queso cheese to the top for extra yummyness!
