Pav Recipe| Homemade Pav | Ladi Pav Recipe | Mumbai Style Ladi Pav | Pao Recipe | Pau Recipe | Pav Recipe This recipe is eggless. While coating the pav before baking with milk will make this complete recipe eggless. Unless using eggwash for a more brighter colour of baked pav. Eggwash is the only egg used for this recipe. This recipe doesn't need eggs for the dough!! The choice is yours if you prefer milk or eggwash for coating the pavs before baking!! 😊 Makes approximately 9 -1 2 pavs Ingredients YEAST PREPERATION Milk – 1 ¼ cup Sugar – 2 tbsp Active Dry Yeast – 2 ¼ tsp or 8 gms PAV DOUGH All-Purpose Flour – 3 cups or 450 gms Oil – 2 tbsp Unsalted Butter softened – 3 tbsp Salt 1 tsp Coat the pav / pau / buns before baking with milk or egg wash Method 1) Activate the yeast with lukewarm milk and sugar. Milk should be around 100F – 110 F or 38 Celsius – 43 Celsius. Let the mixture rest for a minimum of 10 minutes till the yeast bubbles and activates. 2) To a mixing bowl add flour. Salt and oil. Give it a stir. Now add the yeast. Knead till dough comes together. Knead for atleast 7 mins. 3) Now add the softened butter. Knead till butter is well combined with the dough. Knead for anywhere between 5-7 mins. 4) Place the pav dough in a deep bowl till double in size for atleast 2 hrs. Cover with clingfilm and place in a warm place till it rises. 5) Once it rises just punch the dough to release the air from it. Divide the dough in to equal balls. Shape into balls. Place in a greased baking tray. Cover and let it rise again for another 40 mins. 6) Once the second rising is done. Brush and coat the dough balls with milk or egg wash . (Egg wash is Egg yolk mixed with 1 tbsp milk) 7) Preheat oven to 400 F. Bake for anywhere between 10-15 mins or till done. Every oven is different. Mine is gas oven. It took me approximately 15 mins to bake. 8) Remove from the oven. Apply butter over the top of the pav. Cover with a damp cloth or kitchen towel. Let the pav cool and then enjoy it!! Tip I doubled the batch for baking 28 pau. Let the yeast+milk+sugar rest for 20 mins minimum.
