  • 1 lb boneless, skinless chicken breasts
  • 1 cup salsa
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 8 small corn tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup shredded cheese (optional)
  • 1/4 cup chopped cilantro (for garnish)

Instructions

  1. 1Preheat your oven to 375°F (190°C).
  2. 2In a baking dish, place the chicken breasts and season with cumin, garlic powder, salt, and black pepper.
  3. 3Pour the salsa over the chicken, ensuring it is well coated.
  4. 4Cover the baking dish with aluminum foil and bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  5. 5Remove the chicken from the oven and let it rest for 5 minutes before shredding it with two forks.
  6. 6While the chicken is resting, warm the corn tortillas in a skillet over medium heat for about 30 seconds on each side until pliable.
  7. 7Assemble the tacos by placing a portion of shredded chicken on each tortilla.
  8. 8Top with shredded lettuce, diced tomatoes, and cheese if using.
  9. 9Garnish with chopped cilantro before serving.
