Todays video is for a Braised one pot Lamb with Fennel Bulb. Cooked low and slow in the oven, this is the perfect dish for a midweek dinner. INGREDIENTS(serves 4) 3 tbsp avocado oil 1kg stewing lamb cut in 2cm(1in) cubes 1 onion chopped 2 garlic cloves crushed 1 stick celery chopped 1 large carrot sliced 3 fennel bulbs, quartered Juice of 1 lemon 2 tbsp chopped fennel 200mls lamb or chicken stock 100mls dry white wine METHOD Heat the oven to 160c/140c fan/ 325f Heat the oil in a flameproof casserole dish and brown the meat Add the carrots, celery, onions and garlic and cook for 4-5 minutes Add the fennel and cook for a further 4-5 minutes Stir in the lemon juice, chopped fennel, wine and stock and bring to a boil Cover and cook in the oven for 70-80 minutes until the meat and vegetables are tender
