Original link to recipe from Sandy's Kitchen: http://www.sandyskitchenadventures.com/2020/08/zucchini-pizza-casserole.html Ingredients I used to make 4 servings instead of 6: 2 3/4 cup shredded zucchini (225 g weighed after dried out) 1/3 cup egg beaters 1/3 cup grated parmesan cheese 1/2 C + 2 T mozzarella 3/4 C shredded cheddar 12 oz cooked ground beef 1/3 C scallions 1 t minced garlic 1.16 cup marinara sauce 149 g bell peppers Directions I used: 1. Preheat oven to 400 degrees. 2. Shred zucchini and place on paper towels. Press paper towels on top and let sit for 30 minutes. 3. Brown ground beef with diced bell peppers, scallions, and minced garlic. Drain fat. 4. Combine zucchini, egg beaters, parmesan cheese, 1/4 cup of mozzarella, and 1/4 cup of cheddar in large bowl. Press mixture into a greased Pyrex baking dish. Bake for 25 minutes. 5. Stir in marinara sauce to ground beef mixture. 6. After crust is finished baking, top crust with beef/sauce mix and sprinkle with remaining cheese (1/3 cup of the mozzarella & 1/2 cup of the cheddar). 7. Return casserole to oven and bake for an additional 20 minutes. Made 4 servings with above calculations. Each serving provided 1 Lean, 3 Greens, 3 Condiments. This reheated very well in the microwave for 2 minutes per serving!
