Preheat the oven at 375. Line the 9x13 pan with unbleached parchment paper. In a large bowl of Kitchen Aid Mixer, beat the eggs on 10 until foamy. The sugar should be added one teaspoon at a time until all of the sugar is added. Then, add the vanilla. Note the mixer should beating while you’re adding the sugar and vanilla. Use a 3 quart bowl to mix the flour, baking soda, and salt. Remember, pour the baking powder into the flour and salt before mixing. The mixture should be folded into the flour. If you’re not certain how to fold go around the edges and up through the middle. Do not stir the mixture. Locate an offset spatula to smooth the mixture on top of the parchment paper. Then, bake the mixture on 9 minutes if the top isn’t dry add on two minutes. Pour the heavy whipping cream inside of the Kitchen Aid mixing bowl and beat on high until fluffy. The whipped cream should be placed in a small bowl .75 qt to set aside. Now, it is time to remove the cake from the pan. Use the offset spatula to go around the edges of the pan to make sure the roll doesn’t break. Then, grab a cutting board with the parchment paper side up and pill it off. Use a paring knife to cut around the edges. The strawberry spread should be microwaved on one minute. When the spread is warm apply it to the layer. The whipped cream should be poured in the center using the offset spatula to spread the whipped cream across the cake. Slice the strawberry in half, place the sides down and slice thin horizontally. There should be six strawberries used on the inside of the roll. The other two strawberries out of three are for plating and one should be cut into fourths for the top of the roll. Finally, roll the cake and cut off the sides. There might be some cracks in the cake don’t worry about that. Then, sift some powder sugar on the top of the cake. Add the roll to a plate adding the strawberries. Take a picture for great memories.
