During those last sweet, delicious, hot, sweaty days of summer (now), this is what I’m cooking and what I want to be eating: grilled chicken doused in a spicy, citrusy sauce, eaten next to a pile of crunchy vegetables and fresh herbs. Maybe a pot of rice, maybe a torn loaf of bread (either good for soaking the rest of the sauce). Inspired directly by my time eating around Vietnam where it felt like every meal was a celebration of smoky meats, punchy sauce and more herbs than you’ve ever seen in your life, this is a nod, an homage, an approximation, a cliffs notes version.
