Ingredients * 1 whole chicken (4–5 lbs) * 4 tbsp softened butter * 1 tbsp salt * 1 tsp pepper * 1 tsp garlic powder * 1 tsp paprika * ½ tsp dried thyme (optional) * 1 onion (thick slices) * 3–4 large carrots (big chunks) * 4 Yukon gold potatoes (halved or quartered, large pieces) * ½ cup chicken broth Instructions 1. Remove giblets. Pat chicken dry. 2. Mix butter with salt, pepper, garlic powder, paprika, thyme. 3. Rub butter mixture all over chicken (and under skin if you want). 4. Place onion slices, carrots & potatoes on bottom of crockpot. 5. Add broth. 6. Place chicken breast side up. 7. Cook LOW 6–7 hours (until internal temp 165°F in thickest part). Optional: Broil 3–5 minutes at end for crispy skin. Tip: Let rest 10–15 minutes before carving.
