Warm beef with reserved juices. 2. If needed, thicken with gravy packet or cornstarch slurry. 3. Spoon beef and gravy over mashed potatoes. 4. Add a veggie on the side. Meal 2 šŸ² MEAL #2: BEEF BIRRIA SOUP (NOT TACOS) Ingredients • Shredded chuck roast • 2–3 cups reserved cooking liquid • 1 can fire-roasted tomatoes • 2–3 dried guajillo or ancho chilies (or chili powder shortcut) • 1 tsp cumin • 1 tsp smoked paprika • ½ tsp oregano • Garlic (2–3 cloves) • Onion (½–1, chopped) • Lime juice • Cilantro Instructions 1. Cook tomatoes, chilies, garlic, cumin, paprika, oregano. 2. Add mixture to pot with reserved juices. 3. Add shredded beef. 4. Simmer 20–30 minutes. 5. Finish with lime and cilantro.
