Instructions

  1. 1Preheat the oven to 425°F (220°C).
  2. 2Line a large sheet pan with parchment paper for easy cleanup.
  3. 3Cut the potatoes into cubes and place them on the sheet pan.
  4. 4Chop the carrots and bell peppers, adding them to the pan with the potatoes.
  5. 5Slice the onions and add them to the mix on the sheet pan.
  6. 6Drizzle olive oil over the vegetables, ensuring they are well coated.
  7. 7Mince the garlic and sprinkle it over the vegetables.
  8. 8Season with paprika, salt, black pepper, rosemary, and thyme to taste.
  9. 9Toss the vegetables to evenly distribute the seasonings.
  10. 10Nestle the chicken thighs among the vegetables on the pan.
  11. 11Squeeze lemon juice over the chicken and vegetables for added flavor.
  12. 12Roast in the preheated oven for 25-30 minutes, until the chicken is cooked through and vegetables are tender.
  13. 13Add broccoli and zucchini to the pan, stirring them into the mix.
  14. 14Return to the oven and roast for an additional 10-15 minutes, until the broccoli is bright green and tender.
  15. 15Remove from the oven and let rest for a few minutes before serving.
