Some days (most days now that we have an infant) we just want to whip up a quick and easy dinner because we're tired and don't feel up to cooking something elaborate. Here's a simple pork and green bean stir-fry I threw together along with some Chinese cured duck and rice. The green beans are cooked perfectly and have that coveted wok hei flavor. The green beans are not oily or mushy, and the green beans haven't lost their luster or bite. Stir-frying green beans are my favorite way to prepare long green beans. Chinese cured meats are something we always have in our fridge. Chinese cured sausage (laap6 ceong4, làcháng), Chinese cured pork belly (laap6 juk6, láròu), and Chinese cured duck (laap6 aap3, làyā) are some of my favorite Chinese cured meats.
