Who said muffins can’t be high protein AND taste good? 👀 These chocolate protein muffins are fluffy, gooey, and packed with 9g protein each. Perfect for meal prep, snacks, or that late-night chocolate fix without wrecking your goals. Recipe (makes 10 muffins): - 3 ripe bananas (about 150g peeled) - 2 medium eggs - 60g honey - 1 tsp vanilla extract - 120g oat flour (or oats blended into flour) - 60g chocolate protein powder - 30g cocoa or cacao powder - 2 tsp baking powder - ¼ tsp salt - 70g chocolate chips Method: 1. Preheat oven to 170°C and line a muffin tin with 10 cases. 2. Blend bananas, eggs, honey, and vanilla until smooth. 3. Add oat flour, protein powder, cocoa, baking powder, and salt. Blend again. 4. Stir through chocolate chips. 5. Divide into 10 muffin liners. 6. Bake 18–24 mins, until a knife comes out clean. Cool before storing (if you can wait 😏). 7. To Reheat: Pop them in the air fryer for 2–3 mins (or 40 secs in the microwave) and they’re as gooey as the day you made them.
