Jinsi Ya Kupika Pilau Tamu | Ya Zanzibar | (Puloa, Palov, Osh) Recipe ! ZanTasty Pilau (pulao) is eaten widely across the world in different forms. In the Swahili cuisine it is heralded as one of the finest dishes. The rich combination of spices makes a delicious aroma and leaves you eager to dig in. Follow ZanTasty as we show you our step by step tutorial on cooking the most delicious pilau, cooked outside. Serves: 12 - 15 people Ingredients: 4 Red or white Onions - medium, thinly sliced Potatoes (medium) - peeled and cut into halves 2 kg Beef - Chopped ( you can use bone in or boneless) 2 cups water 6 L water 3 tbsp garlic- minced 3 tbsp ginger- minced Salt - to taste 1 Cup Ghee 2 1/2 Rice PILAU MASALA SPICES: 1/3 cups Cumin seeds 1/3 cups Cardamom pods 5 Sticks Cinnamon sticks 1 tsp Whole black peppercorns 2 tbsp ginger (use when frying the onions and masala) - minced 2 tbsp garlic (used when frying the onions and masala) - minced METHOD : 1) In a large pot, on medium high heat, add meat , Cover with a lid and let it cook for 2-3 minutes. 2) Add 2 cups of water, stir in the garlic (3tbsp ), ginger (3 tbsp) and salt to taste, then cover. Let it cook for 5-7 minutes. 3)Add more water (6L) and let it cook for 30 minutes or until the meat is tender. 4) Once the meat is nice and tender, remove and set it aside. Save the stock for later when cooking the rice. 5)MAKING THE PILAU MASALA: In a bowl combine onions, cumin seeds, cardamon pods, cinnamon sticks and whole black peppercorns, set aside. 6) ADD THE ONIONS AND MASALA : Heat a large pot over medium heat, add the ghee and fry the onions and the masala until slightly dark brown and fragrant. this should take 5 - 7 minutes. 7) ADD THE MEAT: stir in the garlic,2 (tbsp) ginger (2tbsp)and salt to taste. Sauté for 5 minutes. 8) Add THE BEEF BROTH: and potatoes then bring to a boil for 10 minutes. 9) ADD THE RICE stir and cover. on medium heat cook for 15-20 min or until the rice is cooked and rice is absorbed. 10) Enjoy!
