Baked Chicken Thighs: To a gallon sized ziplock add: 1 lb boneless, skinless chicken thighs 1/4 cup olive oil 2 teaspoons of each seasoning listed: Salt Black pepper Garlic powder Onion powder Lemon pepper Italian seasoning Dried Parsley 1 teaspoon paprika Add all ingredients to ziplock, close and “shake” until evenly coated. Then place onto foil lined baking sheet and put into 350 F oven for 30-35 minutes or until internal temp reaches 170 F. Creamy Spinach Sauce: To a blender or nutribullet: 1 cup of fresh spinach, stems removed if necessary 1/4 cup olive oil 1/4 cup Greek yogurt 1 tablespoon fresh garlic 2 tablespoons diced red onion 2 tablespoons of Parmesan cheese Salt and Black pepper to taste In small sauce pan: Turn on medium low heat, add sauce with 1-2 tablespoons of a red cooking wine. Add cooked pasta plus 1 tablespoon of pasta water. Cook for about 2 minutes or until sauce is “attached” or coated to pasta. Season with salt and pepper to taste. Serve with seasoned chicken of choice, grated parm, sliced cherry tomatoes! enjoy!
