I hope you enjoy! 0:00 Hey y'all 1:12 One Pot Creamy Orzo https://daenskitchen.com/one-pot-creamy-orzo/ 10:52 One Pot Chicken Noodle Soup https://www.allrecipes.com/recipe/26460/quick-and-easy-chicken-noodle-soup/ 16:25 One Pot Chicken Stew Ultimate Chicken Stew Ingredients: Chicken: 1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces Vegetables: 2 medium carrots, sliced 2 celery stalks, chopped 1 large onion, diced 3 garlic cloves, minced 2 medium potatoes (Yukon Gold recommended), diced 1 cup frozen peas (we subbed shelled edamame) For the Broth: 4 cups chicken broth (low-sodium if possible) 1 cup dry white wine (or additional chicken broth) 2 tbsp all-purpose flour 1 tbsp unsalted butter Herbs and Spices: 1 tsp dried thyme 2 bay leaves Salt and freshly ground black pepper to taste 1 tsp paprika Optional for Depth of Flavor: 2 slices of bacon, chopped (optional) 1 tbsp Worcestershire sauce 1 tsp Dijon mustard If using bacon, cook it in the pot over medium heat until crisp, then remove and set aside, keeping the fat in the pot. If not using bacon, heat 1 tablespoon of olive oil in the pot. Add the chicken pieces to the pot and cook until browned on all sides, about 5-7 minutes. Remove the chicken and set aside. In the same pot, add the butter (if you skipped bacon). Once melted, add the onion, carrots, and celery, cooking until they start to soften, about 5 minutes. Stir in the garlic, thyme, and paprika, cooking for another minute until fragrant. Sprinkle the flour over the vegetables, stirring to coat. Cook for 2 minutes to remove the raw flour taste. Slowly pour in the wine (or additional broth) to deglaze the pot, scraping any browned bits off the bottom. Let it simmer for about 2 minutes to reduce slightly. Return the chicken to the pot along with the potatoes. Add the chicken broth and bay leaves. Bring to a boil, then reduce to a simmer. Cover and let simmer for about 30 minutes, or until the potatoes are tender. If at any point the stew looks too thick, add a bit more broth or water. Stir in the peas (or edamame), Worcestershire sauce, and Dijon mustard if using. Cook for an additional 5-10 minutes. Remove and discard the bay leaves. Taste and adjust seasoning with salt and pepper. Serve hot, optionally garnished with the cooked bacon from earlier or fresh parsley if available.
