First we're going to make Thai tea infused milk. Heat up milk on med-low heat until it steams and bubbles around the edge of the pot. Pour this over your Thai tea mix and let steep for 5 minutes. Strain 1/2 cup Thai tea infused milk for later. (The Thai tea mix absorbs some of the milk, which is why we need more to yield 1/2 cup.) 2. Dissolve gelatin granules in cool water and set it aside. You can give it a mix, but you actually don't have to. The gelatin will absorb the water. 3. Heat heavy cream and sugar on stove over med-low heat until sugar dissolves. Stir in Thai tea infused milk. Once incorporated, stir in vanilla and gelatin until gelatin dissolves. 4. Strain mixture (to catch any undissolved gelatin, just in case) and divide into 8 servings dishes. Let cool until it reaches room temperature, then cover with plastic wrap refrigerate for at least 4 hours.
