Kathy’s Southern Kitchen Peanut Butter Pie *1 (9 inch) Prepared Chocolate Pie Crust (completely cooled) 1 (8oz) Package of Cream Cheese, softened ½ Cup of Creamy Peanut Butter (You can use more, just use equal amounts of powdered sugar) ½ Cup of Powdered Sugar 2 8oz Container of Cool Whip ¼ cup of melted milk chocolate chips for garnish Directions Mix the cream cheese, sugar and peanut butter on low speed until smooth. Boost speed and mix approximately one minute until fluffy. Fold in 1, 8oz container of whipped cream into the peanut butter mixture. Spoon into pie crust. Spread the remaining cool whip over the top of the pie. I only use 1/3 to ½ of the Cool Whip rather than the entire container. But, use as much or as little as you like. Melt chocolate chips in the microwave in 30 second intervals until smooth and melted. Drizzle the melted chocolate over the pie. You can also use chopped Reese’s Cups or Roasted Peanuts for a garnish. Refrigerate at least one to two hours before serving. The longer it sits, the better it gets so don’t be in a hurry to eat this pie. It’s best if it sits overnight before serving. *Chocolate Crust Recipe 2 Cups of crushed chocolate cookies (I used chocolate animal crackers) ½ Granulated Sugar ¾ Stick of Melted Butter Mix together the ingredients and press into a 9 inch pie pan. Bake at 350 degrees for 15 minutes. Cool completely before adding pie filling. Enjoy!
