Here's the recipe: Sausage Mash & Onion Gravy Serves 2 6 x Pork Sausage 1 Tbsp x Olive Oil 850g x Potatoes 60ml x Milk 30g x Unsalted Butter Salt and Pepper to Taste Cabbage or Greens of your choice For the Gravy 3 to 4 x Medium sized Brown Onions (sliced) 1 Tbsp x Plain Flour 450ml x Beef Stock 1. Begin by peeling the potatoes and cut them into quarters. place them into a pan of cold salted water and place over a high heat. Once boiling, turn the heat down to low and simmer for 15 to 20 minutes or until tender. 2. Place a frying pan over medium heat and add in 1 tbsp of olive oil. Heat for 2 minutes and then place in the pork sausages. Cook for 15 minutes turning every few minutes until completely cooked through. 3. Once the sausages are cooked, remove them from the pan and add in the sliced onions. Add a pinch of salt and cook until soft. 4. Next, stir in 1 Tbsp of plain flour and cook for one minute before pouring in the beef stock. Bring to a simmer and cook until its your desired thickness. 5. Meanwhile, drain the cooked potatoes and add 60ml of milk and 30g of butter into the same pan used to cook the potatoes. Warm the milk through until the butter melts and then add the potatoes back in. Mash until the potatoes are smooth and season to taste. 6. Place the sausage back into the gravy to warm through before serving. 7. To serve, place a good dollop of mash into the centre of the plate and stack your sausages directly on top. Ladle over your onion gravy and serve with greens of your choice.
