SERVES 4 SYNS PER SERVING 13 Deduct 6 Syns if using the reduced-fat mozzarella as a Healthy Extra, and deduct 7 Syns if using the wrap as a Healthy Extra 200g spinach Low-calorie cooking spray 1 red onion, finely chopped 1 red pepper, deseeded and finely chopped 1 garlic clove, crushed 1 tsp dried oregano 100g lean ham, visible fat removed, chopped 280g reduced-fat mozzarella, chopped 4 Slimming World Hi-fi White Wraps 4 tbsp tomato purée Tomato and mixed-leaf salad, to serve Put a large, non-stick frying pan over a medium-high heat. Fry the onion and pepper for 5 minutes, stirring regularly. Stir in the garlic and oregano, cook for 1 minute, then remove from the heat. Roughly chop the wilted spinach, then mix with the onion and pepper along with the ham and mozzarella, and season. Spread each wrap with 1 tbsp tomato purée, then top each with a quarter of the mozzarella and ham mixture. Roll up the wraps, folding in the ends, then place seam-side down in a large air fryer basket. Spritz with a little cooking spray and cook at 180°C for 12-14 minutes. Halve each pizza pocket widthways, and serve 2 halves per person with the salad. OR OVEN COOK! If you don’t have an air fryer, preheat your oven to 180°C/fan 160°C/gas 4. Make up the pizza pockets following the method above, then instead of air frying,wipe out the pan, spray with cooking spray, put over a medium-high heat and fry seam-side down for 2-3 minutes on each side until golden. Transfer to the oven for 7-8 minutes to properly melt the cheese, then slice and serve.
