TEXAS-SIZE COWBOY COOKIES...Loaded with Chocolate Chips, Sweetened Shredded Coconut, Rolled Oats, and Chopped Pecans!! BIG DELICIOUS TEXAS SIZE COOKIES!! YUMMINESS!! Recipe below... TEXAS SIZE COWBOY COOKIES (Makes 20 large Cookies) Preheat oven to 350 degrees F. Cookie sheet(s) lined with parchment paper or not!! 1-1/2 cups all-purpose flour 1-1/2 teaspoons baking powder 1 teaspoon baking soda 1 teaspoon ground cinnamon 1/2 teaspoon salt 3/4 cup (12 tablespoons) butter, softened 1/2 cup packed light brown sugar 1 cup granulated sugar 2 eggs 1-1/2 teaspoon pure vanilla extract 1-1/2 cups dark chocolate chips, or substitute with semi-sweet chocolate, milk chocolate, or white chocolate chips 1-1/2 cups (1-minute) rolled oats 1 cup sweetened coconut flakes 1 cup chopped pecans 1. In a medium-size mixing bowl whisk together all-purpose flour, baking powder, baking soda, cinnamon, and salt until well blended. Set aside. 2. In a large mixing bowl add softened butter, brown sugar, and granulated sugar. Beat with hand-mixer on high-speed for 2-3 minutes. Add eggs, 1 at a time, beat for 1 minute after each addition. 3. Beat 1/3 of flour mixture, at a time, into butter mixture until well blended, about 1-2 minutes, after each addition. 4. Stir in rolled oats, coconut flakes, pecans, and chocolate chips until evenly distributed throughout cookie dough. 5. Drop 1/4-cup amount of cookie dough onto prepare cookie sheets about 2-inches apart. 6. Bake in preheated oven for 18-20 minutes or until edges of cookies are golden brown. 7. Cool on baking sheet for 5 minutes before transferring to cooling rack. TIPS: Wrap each cooled cookie in plastic wrap before adding in airtight container.
