How to make Giniling Menudo ✅Ingredients 2 tablespoons oil 2 large Potatoes, peeled and diced 1 large carrot, peeled and diced 1 onion, peeled and chopped 4 cloves garlic, peeled and minced 1 ½ pound ground pork 2 tablespoons calamansi juice 2 tablespoons soy sauce 2 tablespoons tomato paste 1 cup water 2 large tomatoes, diced Salt to taste Pepper to taste 1 cup frozen green peas, thawed 2 tablespoons raisins 1 small red bell pepper, seeded, cored, and diced 1 small green bell pepper, seeded, cored, and diced ✅Instructions In a wide pan, heat oil. Add potatoes and cook for about 2 to 3 minutes. Add carrots and cook until lightly browned and almost tender. Remove and set aside. Add more oil as needed. Add onions and garlic and cook until softened and aromatic. Add ground pork and cook, breaking apart with the back of the spoon, until lightly browned. Add calamansi juice and soy sauce. Stir until well combined. Add tomato paste. Stir until tomato paste is almost absorbed. Add water and stir. Bring to a boil. Lower heat, cover, and cook for about 20 minutes or until the meat is tender. Season with salt and pepper to taste. Add potatoes, carrots, green peas, raisins, and bell peppers.
