Egg-Tofu Stir Fry in Soy Sauce By Su’s Cookbook Ingredients: 2 blocks soft beancurd/tofu (buy that is ideal for frying) - 300gms each 5 cloves of garlic, chopped 2 fresh chillies, chopped (remove the seeds) 2 red cili padi, sliced 4 stalks of scallion, roughly chopped Sesame oil (optional) Oil for cooking Soy Sauce Mixture: 1 ½ tbsp oyster sauce ½ -1 tbsp dark soy sauce 1-1 ½ tbsp sweet soy sauce/kicap manis 1 tbsp light soy sauce 1 tsp sugar (optional) 1 tsp any vegetable seasoning powder or ½ stock cube 1 tsp cornstarch White pepper powder 150ml water For dipping: 2 eggs, beaten Corn Flour for coating the sliced tofu Steps: Cut the beancurd to your desired size. Then, coat it with cornflour and dip it in the egg. Heat up a pan over medium low flame, then shallow fry till crisp on both sides. Set it aside. Now, heat up some oil in another wok. Add in all the chopped garlic, part of the red chilli and scallion. Also, add in a few drops of sesame oil. Sauté for 2 minutes. Now, pour in the soy sauce mixture. Keep mixing until the sauce starts to thicken, 2 minutes. Remove it from the stove and place back the tofu. Pour the soy sauce mix onto the tofu. Simmer for a few seconds. Garnish it with the cili padi and remaining chopped scallion and red chilli. Serve it immediately and enjoy the crisp egg-tofu stir fry😋😋😋
