This recipe for 1 person Cook time : 15 minutes Ingredients 2 tbsp chopped spring onions 250 g leftover potatoes, diced 3 small eggs 2 tbsp shredded Emmental cheese 100 g spam 1 tbsp cooking oil A little salt A little ground pepper Instructions 1.In a bowl, crack in eggs. 2.Season with a little salt and ground pepper. 3.Using a fork to beat the ingredients until combined. 4.In a flying pan on medium high heat, pour in 1 tbsp cooking oil. 5.Add in the spam and sauté them for about 2 minutes. 6.Add in the spring onions and leftover potatoes. 7.Sauté all ingredients until combined for about 5 minutes. 8.Season with a little salt and ground pepper. 9.Sprinkle with the cheese. 10.Pour in the beaten eggs on top. 11.Wait for the eggs to set and stir the ingredients until the eggs are golden brown on both sides for 2 minutes. 12.Transfer the scrambled egg omelette into a plate and serve with spicy sauce.
