New york style cheesecake Ingredients ( room temperature) 4 cream cheese blocks 32oz cream cheese 3/4 cup sour cream 2 tsp vanilla extract 1/4 tsp Salt 4 eggs 1 1/4 cup sugar Graham cracker Crust 1 1/2 cups crumbled gramcracker 2 1/2 tbsp Sugar 5 tbsp Melted butter Directions Using a food processor Grind up, Graham Crackers In a bowl, mix crumbled graham crackers, sugar, and melted butter It should be a Sandy mixture Put in a springform pan and spread out and up the sides. Note: You may have to use a flat cup and your hands to spread it out and to help get it up the sides Note: Dont make sides too high it will crumble Bake the crust in the oven to help firm it up some at 350°F for 10min Set crust aside when done baking Directions Cheesecake mixture First, boil some water to have it ready for later Use room temperature ingredients In a stand mixer or hand blender Cream the cream cheese until it is smooth and creamy Note: You don't want to incorporate too much air in it. It can lead to cracking. So, use the low slow speed. Mix in sugar & salt Mix in vanilla extract Add eggs 1 at a time, incorporating them in Note: lightly beat each egg to break up the yolk some Add in sour cream Mix for another 1-2min Pour the cheesecake batter into pan Take the boiling water and fill a 9in cake pan half full with hot boiling water to help the crust not crack . Put it on the bottom of the rack and the cheesecake on the middle rack. The steam should help the crust not crack. Bake 325°F for 50-60min or until the center is wobble slightly Note: another method is you wrap foil around the springform pan ( bottom & sides) fill it in in a pan with hot water around it. After baking Turn off the oven and let the cheesecake cool inside the oven with the oven door propped open with a wooden spoon for 30min to 1hr Then transfer cheesecake to cool down sitting on the counter to come to room temperature Let it sit 2-3hrs or until it becomes room temperature Transfer to the refrigerator covering it with saram wrap Let it cool in fridge overnight Serve and enjoy
